Stack ’em high: It’s Pancake Day

This healthy hot spot serves a range of tasty options and their delicious pancakes are made with organic flour and come in a delicious stack of five – yes that’s right five pancakes (great for those of us who are never satisfied with just one). To celebrate Pancake Day, Kiran Nagra chef and manager at Kai Kitchen shares their popular pancake recipe…
Ingredients 
  • 60g melted butter
  • 600ml buttermilk
  • 5 free range eggs
  • 60g sugar
  • a pinch of salt
  • 25g baking powder
  • 400g plain flours
  • 5 strawberries
Method

Put eggs, butter and buttermilk into one bowl, whisk together.

Mix together the sugar, salt, flour and baking powder in a separate bowl (make sure you sift the flour).

Add all the ingredients into one bowl.

Heat a non stick frying pan on a medium heat, add a knob of butter, once melted then add a ladle of batter, repeat this five times.

Wait until the top of the pancakes starts to bubble and then flip it over, do the same with all five pancakes. Cook until both sides are a light brown colour.

Serve with lashings of chocolate sauce or maple syrup and chopped strawberries.

Dust with some sugar and enjoy!
